Thai Coconut Soup

INGREDIENTS
- 1 quart chicken broth 
- 1 1/2 cup coconut milk 
- 1 tsp freshly grated ginger 
- Juice of 1 lemon 
- 1-2 cup pulled cooked chicken 
- 1-2 green onions, chopped 
- chopped cilantro 
PROCESS
- Bring the stock to a boil, skim any foam that rises to the top 
- Add coconut milk, lemon juice, ginger, and chicken. 
- Simmer for about 15 minutes. 
- Ladle into soup bowls or mugs and garnish with cilantro and green onions. 
*Note:
- The quantity of ingredients mentioned in the recipes are usually adult doses which may be modified for children accordingly. 
- You could blend the mix if your child can’t chew and swallow well.
